Veggie Challenges Thwarted with Recipes

Getting kids (and sometimes adults) to eat vegetables can be a
challenge. Some of the issues may involve texture, while some people
are just "super-tasters" and a pungent flavor may be a hyper-taste
experience. But in many cases, people have just not been exposed to the
vegetables and develop a "veggie resistance." This can also happen
when mom or dad gives up after one or two attempts to get their kids to
eat a new vegetable.
So first up - it can take somewhere around
20 taste exposures (or just visual and taste exposures) to get a child
to try a new vegetable. Adding a dip or jazzing up the presentation can
help. It can also help to get your kid involved in the veggie
selection/prep - those who enjoy the experience and are proud of the
results, may be more likely to try it!!
